Hash Brown Casserole October 18, 2007

Brunch party anyone?  This dish is a BIG crowd pleaser! Ingredients

3 Tbsps oil
2 lbs frozen hash brown potatoes
1 onion, chopped
1 green pepper, chopped
1 red pepper, chopped
2 cups cubed ham
10 eggs, beaten
Salt & pepper, to taste
1 1/2 cups Cheddar cheese, shredded

Directions

Heat oil in large skillet. Add hash browns, onion, and bell peppers. Cook until potatoes begin to brown. Apray 9″ x 13″ baking dish with Pam. Spread potato mixture in pan. Top with ham. Pour beaten eggs over all and season to taste with salt and pepper. Gently stir to coat all ingredients with eggs. Sprinkle with cheese. Refrigerate overnight. Bake uncovered at 375 degrees for 35 minutes. Makes 8 servings.

Once again, my trusty side-kick, Naz, has provided one of her delicious recipes for Banana Bread…

2 cups – Whole Wheat Flour

 ¾ cup – Brown Sugar

3.5 – Bananas (Really ripe and mushy)

½ – cup melted margarine

2 – teaspoons of baking powder

½ – teaspoon of baking soda

½ – teaspoon of salt

1 – egg

Chocolate chips or walnuts (I just pour as much as I want in)

Preheat your oven to 350 C. Mix all of the dry ingredients in a bowl. Mix melted butter, bananas and egg in another bowl. Then SLOWLY pour the wet ingredients into the dry, and stir it together softly until it is all mixed (don’t over mix). Pour a little olive oil into the pan (instead of butter) and with a paper towel rub it all over the pan. Then pour everything into the pan, throw a couple of chocolate chips or walnuts at the top, put it in the oven for about 50 minutes. At 50 minutes, stick a toothpick or fork in it, if it comes out clean, it’s ready, if not, let it go for increments of 10 minutes at a time, doing the test each time. Then let it sit for about 20 minutes before taking it out of the pan… 

 

The Hangover Diaries: Timmy Ho Ho Ho October 1, 2007

I’m sorry, but I love the Tim Hortons breakfast sandwich.  It is delicious and best suited for when one is highly hungover and must put in a full day at the office.  The ingredients in this sandwhich include one Toasted BAGEL (be sure to request the bagel. You could go for the biscuit, but it’s a little much – and make sure to get the BAGEL NOT BUTTERED), a scrambled egg-type thing (with a little bit of onion added…yum!), typical fast-food processed cheese and your choice of sausage or bacon (I prefer the sausage – greasy but good). 

The put it into this cute little wrapper pocket thing and it’s so good!  Enjoy!
